Lately I’ve been feeling like my body is begging me for vegetables. I eat far too much fruit and carbs and not nearly enough veggies, and I’ve been trying to think of creative ways to change that. That won’t feel like punishment and torture.
This morning I made myself a kale-berry smoothie, which actually turned out to be more along the lines of a thick juice, but it was pretty decent! I think I’ll continue to work more leafy greens into my diet this way. Just wanted to pass the info along for those of you who might be interested.
Next time I make one of these smoothies I think I’ll also add some non-fat yogurt to thicken it up. You could even get totally crazy with it and add other stuff like spinach or peanut butter or flax seeds if you wanted to! That’s the magic of a smoothie. There are no rules.
Kale-Berry Smoothie
1 large banana (frozen is fine too)
4-6 kale leaves, ribs removed
1/2 cup frozen strawberries
1 cup frozen blueberries
2-3 packets of Splenda (optional)
1 cup pure water
1 cup ice
Blend!
(serves 1-2)
